Chocolate Chip Cookies
These are the original Toll House Recipe, minus the water test for the
soda, adapted for whole wheat flour or not--your choice
Sheets lightly greased Oven 375
degrees F Time 12-13 minutes
1 cup butter
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla (if not milling
with the wheat)
Mill 350 grams soft wheat with 2 inches of
chopped vanilla bean
or
2 1/4 cup unbleached or whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped toasted walnuts (about
8 ounces, optional)
1 cup chocolate chips (about 6 ounces)
Cream butter and sugars until light and fluffy. Beat in the eggs
and vanilla until smooth and light.
Whisk flour, soda and salt together, then stir into wet; add the
nuts and chips and stir again just until mixed.
Drop by teaspoonsful onto lightly greased sheets, leaving plenty of
room for spreading. Bake 12-13 minutes until pleasantly golden
all over.
