Veal Piccata
(even I can't screw this up)
4 boneless veal cutlets (about 5 ounces each)
1/2 cup flour
1 T olive oil
1 T butter
1/4 cup white wine
1 T lemon juice
fresh chopped parsley
1. Lay the veal between two pieces of waxed paper and pound each cutlet
until thin and tender, then coat them lightly with flour.
2. Heat the olive oil and butter in a large skillet. When the pan is
very hot, saute the veal over high heat until lightly browned, about 1
minute on each side. (Yes, that's all.) Put the cooked veal on a plate
and keep it warm.
3. Add the wine and lemon juice to the skillet and bring it all to a
boil--scrape up the veal brownings. Add salt and pepper and a couple
tablespoons of chopped parsley. Pour this sauce over the veal and
serve immediately.

Palate Cookbook, I'm told.

Monica's Tomato Pie
"(pronounced toMAWto pie)....make a quick and easy pie crust (it's on
the back of the crisco container...salt, flour and water...that's it)
cook the pie crust at 400 for a coupla minutes. put thick slices of
mozzarella cheese all along bottom of crust. put a layer of tomato
slices (freshest you can find) on top. put a piece of basil on each
tomato. dab with pieces of butter. a little black pepper. cook til
cheese melted, pie crust tan. YUM. (will reduce cholesterol for shore.)"

Monica's Marinade
"This marinade for grilled chicken is a breeze. First, chop a good-sized
piece of fresh ginger in a food processor. Then take that paste,
add a couple of heads of garlic, salt, pepper, olive oil, and white wine,
and mix it all up. Add preserves (apricot are really best) to taste.
(A whole jar will do the trick just dandy.)"

Super Chocolatey (sic, and sick) Butterscotch Nuggets
(just in case you're tired of having cereal only at breakfast.)
1 cup Safeway Crunchy Nuggets (note: this is a budget version of
Grape Nuts--they'd probably work just as well (or poorly).)
1/4 cup semi-sweet chocolate pieces
1/4 cup butterscotch pieces
In medium saucepan over low heat, melt chocolate pieces and butterscotch
pieces, stirring constantly until smooth. Gradually add cereal, stirring
until all pieces are evenly coated.
Spread on waxed paper. Refrigerate 30 minutes or until set. Break into
pieces and store in an airtight container.

...August, 1995's Most Disgusting Recipe
Indoor S'Mores
(just in case you haven't purchased your annual per capita
of marshmallows yet.)
5 cups miniature marshmallows
1/3 cup light corn syrup
1 1/2 cups of chocolate chips
6 tablespoons of margarine or butter
1 teaspoon of vanilla
8 cups of Golden Grahams cereal
1 cup miniature marshmallows
Measure cereal into large bowl. Butter 13 x 9 x 2-inch rectangular pan.
Melt 5 cups of marshmallows, the corn syrup, margarine, and chocolate
chips in a 3-quart saucepan over low heat, stirring constantly; remove
from heat. Stir in vanilla. Pour over cereal in large bowl.
Mix quickly until completely coated with chocolate. Stir in 1 cup
marshmallows.
Make squares by pressing mixture evenly in buttered rectangular pan with
buttered back of spoon. Let stand at least 1 hour, or refrigerate if a
firmer bar is desired. Cut into 2-inch squares. (Makes 24 squares.)

...July, 1995's Most Distasteful Recipe
Peanut Butter Raisin Dip
1/2 cup creamy peanut butter
1/2 cup milk
2 tablespoons honey
1/4 cup chopped seedless raisins
In a small bowl, with electric mixer at medium speed, beat peanut butter,
milk, and honey until well-blended. Stir in raisins. Cover; chill until
serving time. Garnish with chopped peanuts if desired. Serve as dip with
Wheat Thins. (Makes 1 cup.)
