Chinese Walnuts

  1. To 6 cups boiling water, add 4 cups walnuts, and bring to boil.

  2. Boil 1 minute, drain in collander, then rinse under very hot tap water.

  3. Very briefly dry on terrycloth towel, but keep hot.

  4. Toss in 1/2 cup sugar and 1 Tablespoon powdered ginger until ginger melts.

  5. Fry in 2 batches in 1" oil.

  6. Drain in collander, then spread on cookie sheet and lightly salt.

Easy, eh? And they're delicious.
